It all began in Silvio Camilli’s butcher’s shop, in the heart of Alta Tuscia. From that first shop, the family has carried on the same trade, generation after generation, between the towns of Acquapendente and Grotte di Castro, in the province of Viterbo.
Over time the business grew: from over-the-counter sales to structured processing, up to the production facility that is still the heart of ILCO today. The scale has changed, not the spirit: knowing the meat, respecting it, working it well.
Unlike those who simply trade meat, we start from farming. The flocks of the Camilli farm graze in a semi-wild, free-range system between the hills and the lake, following the rhythm of the seasons.
Raising our own animals gives us something money can’t buy: the trained eye. It’s with that experience that we also select our partner farms, in Italy and abroad, applying the same standards we demand of ourselves. This is how we guarantee consistent quality and continuity, even at high volumes.
Pastures, flocks and the seasons that shape our work, in the heart of Alta Tuscia.
